Position Summary

Sushi Langford is seeking an experienced Sushi Chef to prepare Japanese cuisine, oversee food preparation and support daily kitchen operations. The successful candidate will maintain food quality and safety standards, develop recipes and menus, manage food costs and inventory, and supervise and train kitchen staff.

Key Responsibilities

  • Prepare sushi, sashimi, rolls and other Japanese specialty dishes with consistent quality, presentation and portion sizes.

  • Prepare and cook complete meals and specialty foods, including orders for special events.

  • Plan menus, create new recipes and ensure dishes meet established quality standards.

  • Estimate food quantities, ingredient requirements and supply costs.

  • Maintain accurate records of food costs, consumption, sales and inventory.

  • Analyze operating costs and kitchen data to control expenses and reduce waste.

  • Supervise and coordinate the activities of chefs, cooks and other kitchen workers.

  • Train staff in food preparation, cooking techniques, safe handling and kitchen sanitation.

  • Prepare suitable dishes for customers with food allergies or intolerances and follow procedures to prevent cross-contamination.

  • Participate in recruiting and hiring kitchen staff.

  • Maintain a clean, organized kitchen and comply with food safety requirements.

Qualifications

  • Secondary school graduation certificate.

  • Two years to less than three years of relevant experience.

  • Experience preparing Japanese cuisine, including sushi.

  • Food Safety Certificate.

  • Ability to communicate in English.

  • Strong organizational, teamwork and kitchen supervision skills.

  • Ability to maintain accuracy and quality in a fast-paced environment.
