We are looking for Head Butcher position.

Job Title: Head Butcher
Wage: $39.00 per hour
Working Hours: 30 hours per week
Employment Type: Full-Time / Permanent (willing to work at weekend and evening shifts until 10:00 PM)
Benefit(s): 10 days paid vacation OR 4% of vacation pay
Job Vacancies: 1 Full-Time job
Qualification:
- Minimum 3 year’s work experience as a butcher
- Completion of High School
- English
Duties:
- Responsible for coordinating with the Chef or Cook
- Cut, trim, bone tie, and grind meats to prepare meats in cooking form
- Trim brisket fat, remove silverskin, and shape meats for uniform smoking and cooking.
- Receive, inspect, and store meat upon delivery and ensure meat quality
- Cure, tenderize and preserve meats depending on menu of the week
- Direct, train, and coach other butchers or meat cutters.
- Manage inventory, keep records of sales and determine amount
- Ensure maintenance and check supply
- Monitor portion sizes and reduce trim waste to maximize.
- Keep work area clean, orderly and free from safety hazards.
