Description
We are looking for a well-experienced Head Chef – Indian to work for Sula Indian Restaurant Commercial Drive, 1128 Commercial Drive, Vancouver, BC, V5L 3X2, Canada.

TASKS AND RESPONSIBILITIES:

Plan, direct, and oversee all food preparation and cooking activities for an Indian kitchen, ensuring consistent execution of curries, tandoor items, breads, rice dishes, appetizers, and desserts.

Establish and enforce culinary standards for Indian cuisine, including spice blends, gravies, marinades, cooking techniques, portion sizes, and presentation.

Lead menu planning and refinement of Indian dishes, balancing authenticity, regional flavour profiles, guest preferences, and operational efficiency.

Supervise and coordinate the work of kitchen staff, ensuring disciplined execution across all stations.

Oversee preparation of core Indian components such as base gravies, masalas, tandoor marinades, doughs, and rice preparations to maintain consistency across shifts.

Estimate food and labour requirements, monitor kitchen costs, and implement portion control and waste-reduction measures to support profitability.

Recruit, train, schedule, and evaluate kitchen staff, developing skill depth in Indian cooking techniques and station leadership.

Coordinate with management and front-of-house teams to align kitchen operations with service flow, take-out demand, catering, and special functions.

Participate directly in food preparation and cooking during peak service periods, special events, or high-volume functions to maintain quality and timing.

Oversee procurement of Indian ingredients and spices, manage inventory levels, and arrange for equipment maintenance or replacement as required.

Ensure full compliance with food safety, sanitation, and hygiene regulations, with particular attention to dairy-based gravies, marinated proteins, and allergen control.
Prerequisites:
Education: Secondary (school) graduation certificate or equivalent.
Experience & Skills: 5 years or more in the Food Industry or equivalent.
Language: English
Annual Salary: $77,000 for 40 Hours per week
Starting Date: As soon as possible
Terms of Employment: Fulltime and permanent
