Benefits:
– 4% of salary for vacation remuneration or 10 days of paid vacation.
Job Duties:
– Determine portion sizes and food costs for sushi, sashimi, specialty rolls, omakase items, and Japanese kitchen dishes while maintaining premium quality and minimizing waste
– Plan seasonal and daily Japanese menus, estimate seafood and ingredient requirements, and coordinate inventory for efficient kitchen operations
– Prepare and execute high-quality sushi, sashimi, nigiri, specialty rolls, and hot Japanese dishes in a fast-paced kitchen environment
– Prepare customized dishes for customers with seafood allergies, gluten intolerance, or other dietary restrictions while following strict food safety standards
– Inspect kitchen and sushi bar areas to ensure cleanliness, food safety compliance, and proper storage and handling of fresh seafood ingredients
– Train and mentor sushi cooks, line cooks, and kitchen helpers in sushi preparation techniques, knife skills, plating presentation, and food handling procedures
– Supervise kitchen staff and coordinate daily operations to maintain consistency, efficiency, and high customer satisfaction during busy service hours
– Manage overall kitchen and sushi bar operations, including ingredient ordering, inventory control, scheduling assistance, and maintaining quality standards for authentic Japanese cuisine
Job Requirements:
Education: Completion of high school is required.
Experience: Candidates should possess at least 3 to 5 years of prior experience in this particular field as a cook or head cook.
