Job Summary: Candidates are responsible for overseeing and directing the preparation and cooking of our specialty Indian dishes, ensuring that they are prepared authentically and delivered in a timely manner for in-house dining and catering. The ideal candidates will bring hands-on culinary expertise to deliver high-quality food and service in a fast-paced environment, maintaining the rich flavors, textures and traditions distinctive to Indian cuisine. Working closely with kitchen staff, the candidates will help coordinate daily kitchen operations, support both restaurant and catering services, and ensure that the vibrant flavors and traditions of Indian cuisine are consistently reflected in all menu offerings.

Job Responsibilities:

  • Plan, organize, direct, and oversee the preparation and cooking of specialty Indian dishes, flavour bases, and desserts, ensuring authentic and balanced flavours, presentation standards, recipes, and traditional cooking techniques are consistently maintained;
  • Oversee, advise, and train cooks in the preparation and use of whole spices, fresh spice blends, chutneys, and curries, including specialized techniques used in Indian cuisine, ensuring a high standard of consistency and quality is maintained;
  • Prepare and cook a variety of specialty Indian menu-items and fresh bases for chutney, curry and spice blends using specialized techniques (e.g. spice tempering), authentic ingredients and recipes;
  • Work with ingredients such as meats, specialty grains, Indian spices, fresh herbs and vegetables, and use specialty cooking equipment designed for traditional preparation;
  • Adapt dishes for customers with specialty diets, allergies, and intolerances while ensuring the authentic flavor profile is preserved;
  • Coordinate kitchen operations during service periods to ensure efficient food preparation in a fast-paced, high-volume environment;
  • Ensure consistent and high-quality food preparation and presentation of all menu-items according to the restaurant’s and catering standards;
  • Participate in planning new menu items and refining offerings, including introducing new regional Indian street food specialties and seasonal items;
  • Create and adapt recipes that can be efficiently scaled for large catering events while maintaining the richness, depth, textures and complexity of flavors;
  • Monitor inventory levels, inspect the quality of specialty ingredients (including spices, meats, and specialty grains) and oversee proper organization and storage to ensure the kitchen remains adequately stocked for daily operations;
  • Place orders with vendors for specialty ingredients and cooking supplies to ensure consistent availability;
  • Ensure proper food handling and compliance with safety procedures are followed during the cooking process, and that all food products are safely stored;
  • Ensure the kitchen and storage areas are maintained and cleaned according to health and safety standards; and
  • Other duties as required.

Minimum Skills Requirements:

  • Completion of secondary school is required;
  • Must have work experience specializing in Indian cuisine with a minimum of 1 year of work experience as a Chef OR 3-5 years of work experience as a Cook;
  • Strong knowledge and demonstrated experience working with regional spices, chutneys, and cooking techniques used in Indian cuisine is required;
  • Prior supervisory experience in a kitchen environment or completion of a related post-secondary certificate or diploma program is strongly preferred;
  • Experience preparing authentic Indian street food specialty dishes is considered an asset;
  • Certification from the Ontario College of Trades is not required;
  • Fluency in verbal English is required;
  • Must be dependable, reliable, and capable of working in a fast-paced environment;  and
  • Must have a professional attitude and strong interpersonal and communication skills.
